Job Description
We’re excited to offer an opportunity for someone to join the Fyne Ales team and make their mark in the UK brewing industry as Head of Origins Brewing.

In 2017, after three years of development, we launched Fyne Ales Origins Brewing – a small-batch mixed fermentation and barrel-finishing project to create innovative, unique beers that explore what it means to brew right here, in our glen, in the west highlands of Scotland, right now, in each season of this year. We are now looking for an experienced brewer who is looking for a challenge to immerse themselves in the brewery, the project, and everything our beautiful corner of Scotland has to offer, with the goal of taking Origins Brewing to the next level.

To that end, building on our successful spontaneous programme, we want to develop a house mixed culture based on local wild yeast strains, so this role will involve a wild yeast capture project. Fermentation in wood, as well as spirit barrel finishing, and letting the beer evolve with the seasons are a key part of the programme, so knowledge and experience here are key. Then we want to bring the sense of place into the beers, this might be through foraging in the local area, or even growing some of our own fruits. This all needs to come together to produce refined, elegant beers, so a great palate and some skilful blending are going to be needed.

Key Responsibilities:
  • Develop & implement long-term Origins Brewing project plan.
  • Plan & manage development of Origins Brewing barrel store expansion project and all wood fermentation and barrel finishing activities.
  • Plan and implement a wild yeast capture project to move to a 100% local yeast house strain.
  • Source local fruits and herbs through foraging, and possibly growing fruits, or working with local suppliers.
  • Lead the blending programme to prepare batches for release.
  • Manage development and take responsibility for all operations of original Fyne Ales brewery – including hands on work on all aspects of brewing in the Original brewery.
  • Lead creative contributions to Fyne Ales new beer development process in the clean beer programmes.
  • Part of the Fyne Ales brew team, including brewing in the new brewery when needed.

Additional Responsibilities:
  • Manage relationships with suppliers and contractors relating to Origins Brewing and original brewery production and development.
  • Support & work alongside existing Fyne Ales brew team in daily brewery activities.
  • Help drive awareness and sales by representing Fyne Ales at UK and international events, developing relationships with customers, brewers and other food and drink professionals.

Professional Qualification and Experience:
  • 3+ years commercial brewing experience at least at Lead Brewer level.
  • Recognised brewing qualification (IBD or equivalent).
  • Knowledge & passion for mixed fermentation and wood-finishing, together with a deep love of the Milk The Funk wiki.
  • Knowledge and experience of wild yeast capture projects.
  • Knowledge of working with foraged ingredients and fruit. Enjoy the prospect of foraging and possibly fruit growing.
  • Able to live and work in the UK (we will help to secure permits / visa if needed), and have a full driving licence (we’re very rural).

Skills and Personal Atributes:
  • Ability to work independently and problem-solve efficiently.
  • Flair for creative thinking and innovation.
  • Outstanding palate – experienced in blending.
  • Ability to work constructively and flexibly as part of a team.
  • Well developed organisational & communication skills.
  • Meticulous record keeper.
  • An effective problem solver who can make things happen.
  • Always keen to learn and develop.

  • Competitive salary (depending on experience)
  • Membership of brewery profit share scheme
  • Pension contribution (optional)
  • 28 days annual leave including statutory holidays
  • On-site accommodation – options available to suit the right person
  • Opportunity to work in a great place, with nice people, while making your mark on the British brewing scene.
